STEPS IN WINE TASTING
 

1. EXAMINE THE WINE

    * Look at the wine from the side and the top

    * Check its overall hue

    * Check its limpidity

    * Check its transparency

    * Tilt the glass at 45 degree against a white background

    * Check changes in tones at the rim

    * Swirl the wine gently and examine the legs of the wine

    * Let the wine rest
 

2. SNIFF THE WINE

    * Prepare mentally for it

    * Without swirling the wine, take one short sniff with the glass at 45o

    * Check if the wine is clean

    * Memorize the aromas

    * Swirl the wine now

    * Take one or two short sniffs again

    * Memorize and record the aromas


3. SIP THE WINE

    * Take a good sip

    * Make sure all areas of your mouth sensitive to taste are exposed to the wine

    * Try to suck in some air

    * Identify the tastes of the wine

    * Feel the weight of the wine and the touch sensation on the palate

    * Hold the wine a little while before swallowing or spitting it out

    * Feel how lasting the wine is in your mouth and at the back of your throat

* Balance (Acidity vs. Sugar, Fruits vs. Tannin)
